Tharid with Talbina
A nourishing combination of two greatly praised Prophetic foods. The Prophet (ﷺ) said: "Talbina gives rest to the heart of the patient and makes it active, and relieves some of his sorrow and grief." — Bukhari

Ingredients
- 500g lamb or mutton, bone-in
- Salt, to taste
- 4 cups water
- 4 pieces Arabic flatbread (khubz)
- For the Talbina: 4 tbsp barley flour
- 2 cups milk
Method
Step 1 — Cook the meat Place the lamb in a pot with water and salt. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until the meat is tender. Step 2 — Prepare the Talbina Whisk the barley flour into milk over low heat. Stir continuously for 10–12 minutes until thickened. Step 3 — Prepare the bread base Tear the flatbread into pieces and spread in a wide serving dish. Step 4 — Assemble the Tharid Ladle the meat broth over the bread. Place the cooked lamb pieces on top. Step 5 — Add the Talbina Spoon the warm Talbina over the assembled dish. Step 6 — Serve Serve immediately whi
