Meat Foreleg (Dhira')

The foreleg (dhira') was a favoured portion offered to the Prophet (ﷺ). It is narrated that a woman gave the Prophet (ﷺ) a foreleg of a goat which he loved, and he accepted and ate it with his companions. — Sahih al-Bukhari. The foreleg is a tender and noble cut close to the forequarter.

Step 1 — Rinse the forelegs well and pat dry. Step 2 — Season: Rub with salt and black pepper. Step 3 — Boil or roast: Place in a pot with water, bring to a boil, skim, then simmer covered for 1.5 hours — or roast in an oven at 190°C for 1 hour until golden and tender. Step 4 — Serve whole: Present on a plate with the bone in. Eat by hand, pulling the tender meat from the bone as is the Sunnah way. Step 5 — Begin with Bismillah.
