Boiled Mutton

Step 1 — Prepare the meat: Rinse the mutton under cold water and pat dry. Rub lightly with salt. Step 2 — Boil the meat: Place the mutton in a large pot and add enough water to fully cover it. Bring to a boil over high heat. Step 3 — Simmer: Reduce heat to low. Cover and simmer gently for 1.5–2 hours until the meat is tender and starts to pull from the bone. Skim off any foam or impurities that rise to the top. Step 4 — Add ghee: In the last 5–10 minutes of cooking, stir in 1–2 teaspoons of ghee.
